Decades before the Great Fire burned or buildings scraped the sky, Chicago’s distilling tradition was born. During the late 1800’s our predecessors transformed the bounty of nearby farms into the whiskey that fueled a city on the make. We like to think of ourselves as an extension of that tradition.

To make our craft spirits, we start with organic grains sourced right here in Illinois. Using family recipes and techniques, we distill in small batches to ensure the best flavors and highest quality possible, every time. Tours are available at our full-service craft distillery in Logan Square to see our unique process in action. Or if you’d prefer, pick up a bottle and taste the difference for yourself.

Chicago Distilling Company was founded in 2010 and is family owned and operated by the DiPrizio family. But the story really begins in the Wisconsin North Woods, nearly a century ago. We’re not looking to recreate what our forefathers were cooking under the moonlit sky on those frigid nights, we’re simply honoring our past and building something for the next generation. And unlike our forefathers, we don't mind at all if people see us work. That’s why we distill, craft, bottle and package everything by hand in our unique Logan Square facility in the full view of our visitors.

How exactly does distillation happen? What’s the difference between Bourbon and Rye? Learn about the process from grain to bottle and everything you always wanted to know about the world of spirits. Our tasting room is a 1,700 square foot facility serving the spirits we make on the premises and is dedicated to education about the craft of distillation practices. Visit with neighbors, enjoy a cocktail or two and learn all there is to know about our handmade spirits.
